A Taste of Home
At Parkland, home is where we gather with friends, enjoy good food and where conversation always awaits. The holiday season is a time to reflect, connect and spend time with those we love. It’s also a time to celebrate, spread joy, carry on long-standing traditions and start new ones. Few traditions are as special as digging out a box full of vanilla-stained recipe cards to create savoury or sweet additions to a meal or festive gathering. Whether you’re baking, cooking, designing or eating – the holidays are a great time to come together and bring memories to life on a serving platter.

Banana Bread

This is an award-winning banana bread and a family favourite! Over the holidays, Norma says she would bake one for each of her children and friends. She even entered a baking contest with this recipe and won first prize for best banana bread, winning her a rolling pin with her name engraved on it.
Biscotti

This is a family recipe, and how Angela would always make it for her children and grandchildren. When she first moved into Parkland, she would bake for team members and her group of friends every day. She says that baking is her passion and loves how baked goods make people smile.

Chrusty Favorki

Zuzanna chose this recipe because it was her children’s favourite treat during the holidays. Zuzanna came to Canada in 1966 from Poland. She first started baking and cooking in Poland and is self-taught – reading newspapers and cookbooks. After moving to Canada, she continued to bake and perfected her recipes by following cookbooks and learning from friends and family and would often take what she liked from recipes and make her own creations.

Peanut Butter Whirls

Eileen discovered this recipe from the 1949-1974 Newfoundland Confederation Commemorative Cookbook. She would often make this recipe when looking for a meal to feed her children and their friends from the neighbourhood. She would make batches of peanut butter whirls to serve as a special treat, and she continues to make them for her son’s family and her friends at Parkland Fredericton to enjoy.
